AlphaBeta Island Lodge & Spa Limited is recruiting a Pastry Chef (Chef De Partie) for our premises at 19-22 Baggot Street Lower, Dublin 2, Ireland. The salary range starts from €34,000 (€17.44/hr) based on a 39-hour week. Salary may be more based on experience and will increase proportionately if additional hours are required. The Pastry Chef is a critical role within our talented culinary team, responsible for crafting a variety of exquisite desserts, pastries, and confections to delight our guests. The position involves preparing both traditional and innovative recipes, decorating pastries with icing and toppings, and maintaining the highest standards of presentation. The role requires meticulous attention to detail and adherence to health and safety standards to ensure a clean, hygienic, and safe cooking environment. The environment is dynamic and demanding, situated in a high-end hospitality setting that caters to discerning guests seeking exceptional service and culinary experience. The candidate will work with professional-grade commercial ovens, mixers, decorating tools, and refrigeration equipment. The role may include some travel within the area for procurement or catering events. The work schedule is primarily based on shift patterns that may include weekends and holidays, with opportunities for training and career progression within our expanding hospitality enterprise. **Responsibilities:** - Prepare a wide range of desserts, pastries, and sweet goods following both traditional and modern recipes. - Decorate pastries and desserts using various icings, toppings, and garnishes to ensure excellent presentation. - Monitor stock levels of baking ingredients, make orders, and manage inventory efficiently. - Maintain a clean, organized, and hygienic workstation in compliance with food safety regulations. - Assist in menu development and recipe testing for new dessert offerings. - Ensure all products meet quality, flavor, and presentation standards. - Work collaboratively with the kitchen team to facilitate smooth service operations. - Follow health and safety procedures diligently, including proper storage, sanitation, and handling of ingredients. - Comply with allergen and dietary requirements where applicable. - Participate in staff training and skill development initiatives. - Handle supplier relations and procurement logistics for baking supplies. **Key Requirements:** - Food Safety HACCP Level 2 certification. - Manual Handling and Safe Pass certifications are not required. - Previous experience as a Pastry Chef or Chef De Partie, ideally in a high-quality hospitality environment. - Good knowledge of baking techniques, pastry decoration, and presentation. - Ability to work flexible hours, including early mornings, evenings, weekends, and holidays. - Strong attention to detail and consistency. - Excellent communication and teamwork skills. - Physically fit to handle long hours standing and manual tasks. - Knowledge of allergen management and food safety standards. - Ability to follow recipes accurately and innovate within the pastry domain. **Additional Information:** - Overtime is available and paid at standard rates. - Opportunities for professional development and culinary training. - Provided or subsidized accommodation is available for suitable candidates. - The position involves working in a fast-paced, high-standard hospitality setting with a focus on guest satisfaction. - Work may involve some off-site catering or special event preparation. **Start Date:** 2025-12-01
